Turkey Meatloaf Muffins

Made these tonight and they were delicious. Very handy for leftovers/lunches too.

1 pound ground turkey
1 egg, beaten
1 cup tomato sauce
1/4 cup Italian bread crumbs
1/4 cup freshly grated Parmesan cheese, plus additional for topping
1/2 red pepper, chopped
1 small onion, chopped
1/2 packet of Good Seasons Italian dressing mix
1 (heaping) teaspoon crushed red pepper flakes
salt and pepper

Preheat oven to 400. Generously spray muffin pan with cooking spray.
Combine all ingredients in a large bowl and mix using hands until well blended. Using a large spoon, generously fill each muffin slot and sprinkle each muffin with additional Parmesan cheese.
Bake for 25 minutes or until a light crust has formed on each muffin.
(Makes 12 muffins)


I sauteed the onion and red pepper until soft. I also used 1/3 cup of eggbeaters instead of the egg.

And for anyone interested...each muffin is 2 WW pts.

Quick version:

1 pound ground turkey or extra lean ground beef
1 package Stove Top Herb Stuffing
1 Cup Water

Mix together in bowl.

Spray muffin tin with non-stick spray. Cook at 400 for 25 to 30 minutes.
Weight Watchers Point Value - 2

Aren't they good?!?! You'll have a chance to taste the version I posted on the 2nd. I'm going to make them into appetizers and see how they turn out.

yea now I just need to try the turkey chili that Amy sent me the recipe for. We'll have that saturday at my pampered chef party. If it's good I'll post it here.

Hey Gayle, do you think this would be good with ground chicken? I have a pound of that in the freezer and was wondering what I could do with it.

I'm not Gayle...but I don't see why not. I've seen reviews on the recipe where people have said they've used chicken instead of turkey and it's come out very good. Let us know if you try it!
